How do I change villager trades?

I am making a game right now (which has a lot of problems) but I want to get this working first so you dont just get every item when joining the game. I have set up a villager NPC but how do I change his trades to ones set by me?

Unfortunately, you area not able to do that right now, if the plot you are working is Emperor+, you can code a custom Shop UI using:

Well I dont have Emporer so im kinda screwed on that front, But I have though of another soulution. Anyways, off to the suggestion channel.
